We don’t eat chicken just because it’s delicious, but it also provides many health benefits. First of all, it’s rich in protein, which makes it great for helping you lose weight. Chicken meat is also a natural antidepressant; prevents bone loss and stimulates metabolism when taken in the right amounts. Above all, chicken is one of our children’s favorite foods! You just don’t know why, but kids love them. And do you know what is the most nutritious part of a chicken? Mom! That is because it is the least fatty. So for today, I’d like to share with you a quick guide on how to grill chicken breast in your La Caja China. Gather your ingredients and enjoy cooking!

Ingredients:

4 chicken breasts, weighing about 6 ounces each, boneless and skinless

¼ cup extra virgin olive oil

2 teaspoons garlic or onion powder

2 teaspoons mustard

3 tablespoons dried herbs (oregano, rosemary, thyme, or bay leaf)

2 tablespoons vinegar

Kosher salt

Ground black pepper, fresh

Cooking instructions:

1. Get a large Ziploc bag or something similar. Pour your vinegar into the bag, followed by your choice of herbs, garlic and onion powder, salt, pepper, your choice of mustard, and your extra virgin olive oil. You can use Dijon mustard or whole grain, whichever you like best. Once the ingredients are in the bag, give it a good shake to create an evenly distributed mixture.

2. Open your resealable bag and place the chicken breasts inside. Reseal and shake vigorously to perfectly coat the chicken meat. Place the bag in the refrigerator to marinate the chicken. Let it soak in the marinade overnight (or longer) for best results.

3. When it’s time to cook the chicken breasts, remove them from the refrigerator and allow them to defrost under cold water. You can leave the tap running to make defrosting even faster. If you don’t like using water for this task, you can defrost it in the microwave as long as your bag is microwave-safe.

4. While you’re waiting for your meat, go ahead and prepare your La Caja China. Place the rack and ashtray in the box. Put in your natural coals and light them up when your chicken breasts are almost ready to grill.

5. After about 20 minutes of setting fire to the embers, they should all be ready. Spread the embers evenly on the grate, making sure to leave a gap at one end. That should be your interesting section in case one or two of your chicken breasts are about to burn.

6. Start putting the chicken breasts on the grill one by one and remember not to cover your La Caja China. You should also grill one side of the chicken for just 5 minutes. Then, flip the chicken on the other side and let it cook again for another 5. Repeat this process until you get the desired result.

7. Remove the chicken breasts from the grill and cool on a plate. Serve with rice or your choice of side such as corn and carrots; good steamed broccoli or your favorite salad. Enjoy!
